Oatmeal Nut Butter Balls

The exact origins of this recipe are a mystery, but there are quite a few similar recipes available online. This particular recipe was jotted down on a piece of notebook paper by my aunt’s co-worker a little over a decade ago.

I used raw honey in this recipe because it was what I had in my pantry. I do want to note that raw honey isn’t generally recommended to be consumed while pregnant. Always check with your doctor or midwife if you are wanting to incorporate raw honey into your diet and enjoy at your own risk. Regular pasteurized honey is thought to be a safe alternative.

These oatmeal balls are a great little snack to have handy in your fridge and only take about 15 min to prepare. You can substitute a variety of nut butters. Fun fact, oats are great for milk production! Overall, I love this recipe because it is quick, every ingredient is something you can store in your pantry for a long period of time, and they are delicious.

Warning: Highly Addictive!

Ingredients:

  • 1 cup raw oatmeal

  • 1/2 cup chocolate chips

  • 1/2 cup peanut butter

  • 1/2 cup ground flaxseed

  • 1/3 cup honey

  • 1 tsp vanilla extract

Toss all the ingredients into a large bowl, mix, roll balls with your hands, refrigerate and then enjoy! (Note: Your hands will get pretty sticky and it will become difficult to get the balls to stay together. I typically rinse my hands, dry, and begin again. You can also roll the balls in shredded coconut to liven things up.
